YUMMY: Carrot salad.
Carrot salad doesn't sound very exciting, but adding a few flavourful ingredients makes it surprisingly yummy.
This recipe comes from The Rutland Arms Inn in Whanganui.
RUTLAND ARMS INN CARROT SALAD
375g coarsely grated carrot
350g coarsley grated tasty cheese
4 stems celery, cut thinly on the diagonal
2 cups peanuts, baked and cooled
1 cup finely chopped parsley
1 cup currants
Lemon pepper, to taste
1 tsp minced garlic
1 cup Master Foods Italian Dressing
Combine all ingredients. This salad makes a lot - enough for six 300g bowls (as above) or one large bowl - so it's ideal for big gatherings.
